I told myself I would get back on track this week and try to get back to my normal routine as much as possible. That means back to early morning workouts, easy weeknight dinners, and revising my goals for September since I slid a little at the end of August. Whoops! Grace not perfection, right?
When life picks up, it is easy to default to take-out and skip cooking all together, but I try to avoid that as much as possible. Easy weeknight dinners have been key to survival. I am talking less than 20 minutes start to finish kind of easy. There are a few handy meals I always keep in my back pocket, and this lemon garlic capellini pasta is one of them! I usually always have the ingredients on hand, which means I don’t have to think about planning or stopping at the store.
First of all, how did capellini get passed over by spaghetti for favorite pasta shape? Or is macaroni the favorite? I guess capellini and cheese wouldn’t work out so well. I like that macaroni tube to catch as much cheesy sauce as possible. Am I right? Anyway, capellini is much thinner and lighter than traditional spaghetti, and is the perfect pasta pairing for this bright lemony garlic sauce. For those not a fan of traditional red pasta sauce, like David (weirdo), this is a great and healthy alternative. Plus it is ALMOST as easy as opening up a jar of pasta sauce. Almost. It pairs well with grilled chicken or fish, or my personal favorite – grilled chicken sausage.
The sauce is an easy blend of olive oil, lemon juice, lemon zest, and fresh garlic. Once you pour the sauce over the pasta, you toss it all together with fresh Italian parsley. Top it with some fresh grated parmesan and my oh my, this is a weeknight winner for sure! Maybe once you try this lemon garlic capellini pasta, you’ll agree that capellini is the new spaghetti!
Lemon Garlic Capellini Pasta - 20 Minute MealPrint Recipe
- 8 oz Capellini noodles (aka angel hair)
- 1/4 cup olive oil
- 2 Tbsp garlic, chopped fine
- 1 Tbsp (heaping) fresh lemon zest (about 1 lemon)
- 1/4 cup fresh lemon juice (about 1 lemon)
- scant 1/4 cup fresh Italian parsley leaves, chopped fine
- salt and pepper to taste
- fresh parmesan cheese for topping, if desired
Over medium heat, in a small pan, add olive oil and fresh garlic. Allow garlic to cook for 60-90 seconds, until fragrant. Remove from heat. Gently stir in fresh lemon juice, lemon zest, and salt and pepper. Set aside.
Bring a large pot of water to a boil, about 2.5-3 quarts. Add a pinch of salt and pasta, stir. Boil for 2-4 minutes or to desired tenderness, stirring occasionally. Drain pasta in a colander, and return to the pot.
Add the sauce to the cooked pasta, along with the Italian parsley. Toss to coat the noodles evenly.
Top with a sprinkling of fresh parmesan cheese, if desired, prior to serving.
