Aloha! I am so excited to finally share a little bit of my trip to Maui. Alchemy is, hands down, one of my favorite places on the island, more like in all of the USA, because they specialize in two of my favorite things – sourdough and kombucha! They pretty much are my spirit restaurant. Is that a thing?
What’s even cooler, Alchemy is owned and operated by twin brothers – Mark and Bryan. Because I am super cool (not) and follow sourdough bakers on Instagram, I have been following Mark for awhile. He is the chef, and lead sourdough baker. Mark also cures all of the meats served at the restaurant. So that pastrami on my sandwich…yeah, Mark did that! Fun fact…I may or may not have uttered, “That’s him!” as he came out of the kitchen while I was there. Yes, I get “star struck” by epic sourdough bakers. Is that weird? Don’t answer that.
Bryan on the other hand, is the kombucha king! He started Valley Isle Kombucha with his wife and got into business with Mark when they realized they could have a taproom style restaurant featuring Valley Isle Kombucha, and seriously ridiculous food. No but seriously, my mouth is watering just thinking about it!
The restaurant itself is small and intimate, with only a few bar seats, and a handful of outdoor tables. The space is bright and extremely welcoming, with a large chalkboard menu, describing their offerings, and a wide selection of their local island flavors of kombucha right on tap behind the bar. I highly suggest blueberry, jackfruit, guava pineapple, and ginger.
They also offer to-go bottles of their kombucha, but it was so fun getting a tasting flight to accompany my mile-high pastrami sandwich. The meat on my sandwich was fall apart tender, and perfectly seasoned. Just the right amount of saltines, and it was balanced perfectly by the honey dijon mustard and house-cured pickles. The BBQ pork sandwich was equally as tender and piled high on Mark’s amazing bread.
As if the food and kombucha wasn’t enough, did I mention how nice Bryan and Mark are? The staff at Alchemy, in general, was so warm and welcoming…the TWO times I came in…on back to back days. Mark even took the time out of his day to help me with any sourdough questions I had. He showed me his starter and helped me perfect my timing and temperature. Thanks to him, my at-home sourdough game just went through the roof!
Bottom line, if you are in Maui, you should go visit these guys. They are super passionate about what they do, and it shows not only in their food, but in their service. Even if you aren’t a sourdough or kombucha connoisseur, make it a point to stop by. The food and kombucha will not disappoint.
