I am so pumped about Fall and the change that comes with this season. Even in LA there is a noticeable crispness to the morning air, and I couldn’t be happier about it! Do you guys have any fun plans for Fall? David and I are going on a special Fall adventure here in a few weeks and I can’t wait to share it with you! In the meantime I am loving meal prep these days and all things pumpkin, cinnamon, apple…just all the goodness! In fact, I recently made these parmesan green beans with toasted almonds and seriously, what a hit! This recipe is adapted from one of my favorite cookbooks that I’ve shared with you before called, At Home with Magnolia.
Let’s be honest, parmesan on anything just makes life better, but add toasted almonds and there is a whole new flavor dimension involved. The almonds add a toasty warmth to the dish, plus the salty creaminess from the parmesan, and just a kiss of garlic…I am pretty sure I just drooled on my keyboard. I promise, this isn’t your ordinary green bean recipe. It is really easy to throw together with either fresh or frozen green beans, and looks so beautiful.
Not to look too far into the future, but this could be the perfect addition to your Thanksgiving table! I know, I know, we aren’t even in October yet. I should cool my jets. But THANKSGIVING! The single best eating day of the year! And it’s almost here! Okay, okay, jets cooled. Sort of.
In all seriousness, go make these parmesan green beans with toasted almonds and you will have a whole new appreciation for this green legume.
Parmesan Green Beans with Toasted AlmondsPrint Recipe
- 1 lb green beans, fresh or frozen
- 1/2 cup roughly chopped toasted almonds*
- 1/2 cup fresh grated parmesan cheese
- 1/4 cup butter
- 2 Tbsp garlic, minced or crushed
- salt and pepper, to taste
Bring a large saucepan of water to a boil. Add the green beans and cook until crisp-tender, about 1-2 minutes. Remove from heat, drain, and rinse under cold water to stop the cooking process.
Return to the green beans to the saucepan and add the butter, garlic, salt, pepper, 1/4 cup parmesan, and 1/4 cup almonds. Cook over medium heat until the butter is melted and the ingredients are well blended.
To serve, sprinkle remaining parmesan and almonds over top.
To toast the almonds, add to a skillet over medium-high heat. Stir frequently, and cook until almonds are golden brown and fragrant.
