This recipe came together in one of those moments when you look in your fridge and realize you have a bunch of random ingredients that you need to use up. Some of my best meals are actually born out of this scenario! This was so good when I made it the first time, I decided to write it down and perfect it for you guys. After a few tweaks, I think it is finally ready to be shared!
If you’ve known me for a while, you know how much I love dishes that include all of the food groups, and come together easily. This pasta dish is packed with flavor, is healthy, and oh so hearty! Even non-veggie lovers won’t complain! I used spicy sausage, but you could easily swap out for fresh Italian as well.
Spicy Sausage and Zucchini PastaPrint Recipe
- 2 fresh spicy Italian sausages, casings removed. Sausage must be fresh, not cooked!
- 1 zucchini, chopped into small pieces
- 3 cloves of garlic, crushed
- 3 cups of fresh spinach leaves
- 2 cups of your favorite marinara sauce (I like Rao's Marinara)
- your favorite pasta shape, cooked according to directions
- fresh grated parmesan
In a large pan over medium heat, brown and crumble the sausage. When it is cooked through, add the zucchini and cook for 1-2 minutes.
Start adding the spinach leaves one cup at a time until it cooks down. Add the crushed garlic.
Pour pasta sauce over the veggies and sausage, and let simmer on low heat, covered, for 5 minutes to let the flavors blend.
Serve over your favorite pasta shape and top with fresh grated parmesan cheese.
Makes about 3 cups of sauce. I also make a bigger batch, and then freeze the sauce so I always have some handy.
