Happy Monday Friends! Have you ever been in need of a quick and easy side dish? Maybe you agreed to make something for a BBQ and you completely forgot? Or are running late from work and need something you can throw together quickly? I give you the easiest green salad ever! It looks impressive, requires minimal effort and time, and you can do all of the shopping at Trader Joes! Plus, GOAT CHEESE! Need I say more?
I love this salad for many reasons, one of which is because you can scale it for two, or feed a crowd! There is no chopping, shredding, or peeling involved. Open a bag each of mixed greens and arugula. Dump the greens in a bowl, top with a few handfuls of arugula, a sprinkle of dried cranberries, a few truffle salt marcona almonds, and crumbled goat cheese. Drizzle with your favorite vinaigrette, and that’s it!
The sweetness from the dried cranberries pairs really nicely with the creaminess in the goat cheese and the savory flavor of the truffle salted almonds. You could also swap out the goat cheese for blue cheese crumbles if you’re feeling extra bold! I always like adding a handful of arugula to my mixed greens because it adds a nice peppery flavor. If you’re not a fan of arugula, you can always leave it out and add more greens.
For four people, I judge one bag of mixed greens, and a half bag of arugula, half of a 5oz stick of goat cheese, a handful of cranberries, and a handful of truffle marcona almonds. That makes a GOOD size side salad for four hungry people. Adjust those numbers as needed depending on the number of people you want to serve.

- 1 5oz bag mixed baby greens (I buy organic at Trader Joes)
- 1 7oz bag arugula (I buy organic at Trader Joes)
- 1 5oz stick of goat cheese
- dried cranberries
- truffle salt marcona almonds
- Vinaigrette of your choice (check out my recipe if you want an easy homemade one!)
Empty bag of mixed baby greens into large bowl. Add 1/2 bag of arugula on top. Sprinkle with goat cheese crumbles, dried cranberries, and truffle salt marcona almonds.
Add dressing and toss right before serving.
